Cooking Clean With Quest – Red Velvet Cupcakes with Blogilates & Quest Creator



Deliciously festive, flavorful, and topped with a swirl of #CheatClean decadence. Host Cassey Ho (Blogilates) and special guest, our very own Shannan Yorton Penna (Quest Creator), show you how to make #CheatClean Red Velvet Cupcakes that will have your taste buds falling in love at first bite.

Macros (per cupcake): 280 calories, 23g protein, 16g fat, 6g net carbs.

INGREDIENTS:

Base:

  • 1/4 cup Vanilla Whey Protein
  • 1/4 cup Almond Meal
  • 1 1/3
  • 1/8 Salt
  • 1/3 tsp Baking Soda
  • 1 tbsp Cocoa Powder
  • Unsweetened 2/3 cup Almond Milk
  • 1 1/3 tsp Vanilla Extract
  • 1/3 tbsp Red Food Coloring

Cream Cheese Frosting:

  • 2/3 bar Double Chocolate Chunk Quest Bar
  • 5 1/3 oz Cream Cheese (1/3 Less Fat)
  • 1/8 cup Sour Cream, Fat Free
  • 1/8 cup Truvia
  • 1/4 cup Vanilla Whey Protein
  • 2/3 tsp Vanilla Extract

Crumbs:

DIRECTIONS:

Component 1:

1. In a bowl combine all your dry ingredients and pre mix

2. In another small bowl add all your wets: almond milk, vanilla extract, and red

food coloring and mix

3. Take wets and add to dries and mix until mix is fully incorporated

Component 2:

1. In a bowl add all ingredients and mix until nice and smooth. You do not want

clumps of cream cheese.

2. Take Quest Bar crumbs and incorporate into frosting.

Component 3:

1. Take the 1 whole Quest Bar and place in microwave for 10-15 sec.

2. Roll out bar, not to thin, and place in oven @350 for 4 mins

3. Once bar is cooled, break apart into smaller pieces until it crumbles.

4. Do the same for the 1/3 bar and set aside. This is for topping the cupcakes.

How to Assemble:

1. Take cupcake pan and place liners.

2. Take a ice cream scooper (Size #12) and place 1 1/2 scoop of batter into cupcake

liner

3. Place in oven @350 for 15 mins

4. Once cooled, cut out center and fill inside and top with frosting.

5. Sprinkle of Double Chocolate Chunk Bar crumbs on top of cupcake.

    I looked up this tecipe b/c the one that came with my powder is missing a key bit of info ( see #2 below). Sadly, this post was even faultier than the printed version.
    1) part of your ingredient list is missing ie the zero calorie sweetener
    2) and exactly how much 1 1/3 of what? Packet, tsp, Tbs, cup, ect?
