Healthy and Fluffy Cinnamon Roll Peanut Butterscotch Pancakes
– 1/4 (or more!) cinnamon roll quest bar chopped into small pieces
– 2.5 tbsp coconut flour
– 1 tbspn peanut flour (I used PB2, you could also just use more coconut flour)
– 3 medium or 2 large egg whites
– 1 tspn Greek yogurt (I used Chobani 0%)
– 1/4 cup any milk type
– 1/2 tspn vanilla extract
– 1/2 tspn butterscotch extract
– 1/2 tspn baking powder
– 1.5 tspns cinnamon
– 1 sachet stevia (or to taste, can use any other sweetener too)

 

1. Stir all ingredients together and make sure the peanut flour and coconut flour soak up the liquid so it’s a nice thick batter. Feel free to add more of these, the thicker the mixture, the fluffier and more cake like pancakes (not too much though otherwise they will be too dry!) 🙂

 

2. Cook like you would your usual pancakes 🙂
Topping: Mix plain low fat or non fat greek yogurt with butterscotch and vanilla extracts as well as stevia (or other sweetener) and cinnamon to taste 🙂 I had a little cottage cheese in mine to give it a ‘faux cream cheese’ feel and drizzled some all natural maple syrup over the top.
