Ingredients

PEANUT BUTTER CUP STRAWBERRY TART

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 scoop Quest Vanilla Milkshake Protein Powder
  • 1 egg
  • 2 tbsps cold butter, chopped

FILILNG

  • 1/2 cup sugar free chocolate
  • 1/4 cup heavy cream
  • 1 package Quest Peanut Butter Cups

TOPPING

  • 6 strawberries, thinly sliced

Method

  1. Preheat the oven to 350 degrees F and prepare 2 small (4″) tart pans with non-stick spray.
  2. Place all the crust ingredients into a food processor and pulse just until a dough forms.
  3. Separate the dough into two evenly sized balls and press them into each tart pan (bottom and up the sides).
  4. Bake the crust for 6-8 minutes until golden brown. Let cool.
  5. Chop the peanut butter cups into small pieces and sprinkle them over the crust.
  6. In a microwave safe bowl, melt together the heavy cream and chocolate until smooth.
  7. Distribute the chocolate between the crusts, spreading it in an even layer over the peanut butter cup pieces.
  8. Chill until solid.
  9. Arrange the sliced strawberries over the chocolate and enjoy!
