Ingredients:

Chocolate Ice Cream

 

Marshmallow Fluff

 

Graham Crumbs

 

Waffle Cone

  • ¾ scoop Quest® Vanilla Milkshake Protein Powder
  • ¼ cup unsweetened almond milk
  • ¼ cup zero-calorie sweetener
  • 1½ tablespoons oat flour
  • ½ egg, whisked
  • 1 tablespoon egg whites
  • 1 teaspoon vanilla extract

 

Method:

Ice Cream

1. In a small pot, add ½ cup of the milk and egg yolk. Set aside.

2. Add the remaining 1 cup milk, Quest Protein Powder®, sweetener, and cocoa powder to a blender and blend for 10 seconds, or until smooth. Set aside.

3. Heat the milk and egg yolk mixture on low-medium heat.

4. Whisk for 5 minutes, not allowing yolk to scramble.

5. Pour egg mixture into blender and blend for 5 seconds.

6. Place blender into refrigerator for 1 hour to cool.

7. Pour into an ice cream maker and follow manufacturer’s instructions. Ice cream should be ready in 15 minutes.

8. Remove ice cream from machine, place in an air tight container, and freeze for about 1 hour.

Fluff

  • In a microwave-safe bowl, add Quest Bar® and almond milk and microwave for 30 seconds.
  • Add mixture to a food processor and process for 5 seconds.
  • Add Quest® Protein Powder and process for 15 seconds, or until thick and whipped.

Crumbs

  • Place Quest Bar® in microwave for 25 seconds.
  • Let cool for 1 minute.
  • Microwave for an additional 25 seconds.
  • Place in refrigerator for 5 minutes. Break into quarter-sized pieces.
  • Place pieces into a mini-blender and process to fine crumbs. Set aside.

Waffle Cone

  • Heat a waffle cone iron to medium.
  • In a small bowl mix together all ingredients with a whisk.
  • Coat waffle iron with nonstick cooking spray.
  • Place 1 tablespoon of batter into center of waffle iron.
  • Cook for 2 minutes or until golden brown.
  • Immediately remove and shape the waffle around a cone-shaped cylinder. Let harden 15 seconds.
  • Remove and place aside for cone to set.

Assembly

  • Spread 1 tablespoon of fluff around rim of each cone.
  • Add 2 small scoops of ice cream into each cone.
  • Top ice cream with graham crumbs, and serve.
