These tasty Quest Nutrition Stuffed Mushrooms make an excellent healthy appetizer for any gathering.
The mushrooms are stuffed with a delicious mixture of Quest Chips, goat cheese, and chopped olives, onions, and tomatoes.
12 oz Baby Bella mushrooms
4 tablespoons green onions, chopped
½ Roma tomato, seeded and diced
1 cup fresh spinach
8 kalamata olives, chopped
3 tablespoons goat’s cheese
Preheat oven to 400°F. Wash and remove stems from the mushrooms. Dry them well. Chop up the stems and set aside. Sautee the green onion in a small nonstick pan coated with cooking spray for 1 minute. Add the stems and tomato cook 2 minutes. Add the spinach and stir until wilted. Remove from heat and stir in the olives and cheese. Crush the chips to crumbs and add into pan, mixing well. Fill each mushroom and place into a medium-baking pan. Bake for 20 minutes or until mushrooms are tender. Pour off any liquid. Serve.
