QUESTIFIED BIRTHDAY CAKE DONUT HOLES

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 scoop Quest Vanilla Milkshake Protein Powder
  • 1 tbsp ground flax meal
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1⁄4 tsp salt
  • 1 cup almond milk, room temperature
  • 1⁄4 cup butter, melted
  • 2 tbsp zero calorie sweetener
  • 3 eggs, room temperature
  • 1 tsp vanilla extract

Glaze

Method

  1. Preheat the oven to 400 F and prepare a donut hole pan (or a cast iron danish pan) with non-stick spray (be generous).
  2. In a mixing bowl, stir together flours, protein, flax, gum, baking powder and salt.
  3. In another bowl, whisk together the almond milk, butter, sweetener, eggs and vanilla until well blended.
  4. Add the wet ingredients to the dry and stir until no spots remain. Let the mixture sit for ten minutes (it will thicken a bit from the flax).
  5. Fill the donut hole cavities with 1 heaping tablespoon of batter and bake for 12-15 minutes and golden brown. Let the donut holes completely.
  6. Stir together the glaze 1 teaspoon at a time until you reach a thin glaze consistency.
  7. Dip half of each donut hole in the glaze, letting the extra run off before topping with chopped Quest Frosted Cookies and sprinkles.
