Well it’s because like for all other major and minor holidays, notable occurrences, and obscure observances, it means we’re gonna get something weird from the folks in the Quest Test Kitchen. And friends, what says Earth Day quite like brownies? Yes, Earth Day Brownies made with Quest Double Chocolate Chip Cookies. The Earth is round. Cookies are round. There you have it. Ingredients

QUESTIFIED EARTH DAY BROWNIES

  • 1 cup almond flour
  • ½ cup zero calorie sweetener
  • 1 scoop Quest Chocolate Milkshake Protein Powder
  • ⅓ cup unsweetened cocoa powder
  • 2 eggs, large
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ⅛ tsp salt
  • ⅓ cup sugar free chocolate chips
  • 1 Quest Double Chocolate Chip Cookie, chopped into fine pieces

    Topping:

  • Fresh mint and flowers (Remove before eating)

Method

  1. Place all the dry ingredients into a bowl and stir to combine.
  2. Whisk together the wet ingredients and then add them to the dry.
  3. Stir until a batter comes together.
  4. Transfer to an 8×8” pan with parchment paper.
  5. Bake at 350 F 15-18 minutes and cooked through.
  6. Melt chocolate and pour over brownies.
  7. Smooth chocolate to the edges of the pan and top with chopped cookie
  8. Finish with fresh mint and flowers.
