Servings Per Recipe 4
Serving Size 1 short cake (166g)

 Cake Ingredients:

2 Strawberry Cheesecake Quest Bar, broken up

1/3 cup coconut flour

2 tablespoons granulated sugar substitute

1 teaspoon coconut oil

½ teaspoon vanilla extract

2 tablespoons unsweetened almond milk

2 egg whites

Pinch salt

Whipped cream:

1/2 cup full fat coconut milk/cream, chilled overnight in fridge

2 tablespoons granulated sugar substitute

½ teaspoon vanilla extract

1.5 scoops vanilla protein powder

Filling:

½ cup chopped strawberries

½ teaspoon granulated sugar substitute

Garnish:

1/8 cup blueberries

1 Large strawberry cut into slices to garnish the tops

Method:

  1. Preheat oven to 350 degrees.
  2. Place bars straight on a nonstick cookie sheet and bake for 7 minutes. Let sit for several minutes to cool and crisp up.
  3. Place the cold coconut cream in a mixer and whip with the sugar substitute and vanilla.  Slowly, while the beaters are running, add the scoop of protein powder.  Beat one minute.  Scoop out in a bowl and place back in fridge for at least 10 minutes.
  4. Stir strawberries with sugar substitute.  Place in fridge.
  5. To make the cake: Place the Quest bars in a food processor and pulse until they make course cookie chunks.  Add in all remaining cake ingredients and process for 20 seconds.  Scrape sides and form 4 even balls.  Place on a nonstick cookie sheet (like a silpat) and form into desired shape (traditional shortcake, dome- whatever you like).  Bake at 350 for 12 minutes.  Remove to cool.
  6. Spoon each cake with strawberries.  Top with coconut whipped cream.  Garnish each one with a sliver of strawberry and 3-4 blueberries.
