Ingredients

Blueberry Muffin Quest Bars®

2 tablespoons sugar-free blueberry preserves

MARSHMALLOW FLUFF

¼ scoop Quest® Vanilla Milkshake Protein Powder

2 tablespoons egg whites

1 tablespoon zero calorie sweetener

Method

COOKIE

  1. Preheat oven to 350°F.
  2. Form Quest Bar® into two cookies.
  3. Bake for 4 minutes.

MARSHMALLOW FLUFF

  1. In a small bowl, add egg whites and using a hand mixer, mix until soft peaks form.
  2. Add in the Quest Protein Powder™ and the sweetener and continue mixing until stiff peaks form.

ASSEMBLY

  1. On one of the cookies, layer marshmallow fluff and blueberry jam then top with the remaining cookie.

    I just purchased a container of the MCT powder. I used it this morning with a recipe for gluten free pancakes, which I made from their directions and I added a scoop of the MCT to it, they made the smoothest batter. I was afraid to also add it to my coffee as I thought it would be too much of that type oil in my tummy to cause some side effects. Do you have any recipes using the MCT powder or should I just add a scoop here or there to whatever I am baking? Thank you

      My apologies for the delayed response — typically with our recipes we use little MCT Oil powder to ensure the recipes have the highest amount of P/Cal (Calories from protein). It’s widely used as an additive to shakes, baking and, yes, coffee! If I happen to come across any recipes that do use it I’ll be sure to post it.
