Ingredients
SWEET CHILI CHICKEN & WAFFLES
Chicken:
- .5 lbs chicken tenders, cut into small pieces
- 2 bags Quest Sweet Chili Tortilla Chips, finely crushed
- 1 egg
Waffles:
- 1 cup almond flour
- 1 tbsp tapioca flour
- 1 tsp baking powder
- Pinch salt
- ½ scoop Quest Vanilla Milkshake Protein Powder
- 1 egg
- 2 tbsp vegetable oil
- ½ cup almond milk
- 1 tsp vanilla extract
Method
- Preheat the oven to 400F and prepare a baking sheet with parchment paper.
- Place the egg into a bowl and whisk. Add the chicken tenders to the egg bowl and toss to coat.
- Add the crushed chips to a second bowl.
- Cover each chicken tender with the crushed chips and place them on the baking sheet.
- Bake for 7 minutes, cover with tin foil and cook for an additional 5-8 minutes and cooked through.
- Meanwhile, place all the waffle ingredients together and whisk until smooth.
- Prepare a waffle stick maker with non-stick spray and cook the waffles ¼ cup at time until golden brown. The batter yields 10 waffle sticks.
- Serve two waffle sticks with 3-4 small chicken tenders. Enjoy with maple syrup.
