We happen to think that cobbler is the quintessential autumn treat. Throw pumpkin and pecan into the recipe, and well…. let’s just say you’re checking a lot of our seasonal boxes: It’s nutty. It’s spicy. It’s pumpkin. It’s pecan. This one is also relatively simple to make using the Pumpkin Pie Quest Bar, so this fall we’re big, big fans.

Ingredients
PUMPKIN PECAN COBBLER
- 1 can pumpkin puree
- 2 scoops Quest Vanilla Milkshake Protein Powder
- 2 eggs
- 2 tsp pumpkin pie spice
- ¼ tsp salt
- 2 tsp vanilla extract
- ⅔ cup heavy cream
- 1 Quest Pumpkin Pie Bar, chopped
- ¼ cup pecans, chopped
- Low calorie ice cream for serving, optional
Method
- Preheat the oven to 350 F and prepare a 8×6 inch serving dish with non-stick spray.
- In a mixing bowl, whisk together pumpkin, protein, eggs, spice, salt, vanilla and heavy cream until smooth.
- Transfer to the serving dish and bake for 20 minutes.
- Remove from the oven and top with chopped pumpkin bar and pecans, bake for an additional 10-15 minutes.
- Let cool before serving.
