PUMPKIN STREUSEL SWEET POTATO BOATS
Method
- Preheat the oven to 400 F and prepare a baking sheet with tin foil.
- Use a fork to stab the potatoes and place them on a plate and in the microwave for 4-5 minutes and softened.
- Once cooked through, let cool.
- Cut the potatoes in half, lengthwise and scoop out the filling.
- Discard 2 of the skins, you will have 6 remaining skins.
- In a mixing bowl, stir together the sweet potato filling, butter, brown sugar, protein, cinnamon, salt and bacon pieces until combined. Fill the skins with the mixture and bake for 20-25 minutes.
- Meanwhile, chop the quest bar into small pieces and place them into a food processor and blend until small crumbles form.
- Sprinkles the crumbles over the boats immediately after removing them from the oven.
- Sprinkle them with cinnamon and serve.
