Which is why we got on the phone to the Quest Test Kitchen and insisted that they come up with a way for us to enjoy our favorite seasonal cookies whenever we want them. Behold: Questified Island Paradise Cookies featuring Quest Chocolate Chip Cookie Dough Mini Protein Bars. All the chocolatey, coconutty goodness with 0g sugar and 6g of net carbs!

Method
- Preheat the oven to 350 F and prepare a baking sheet with parchment paper.
- Unwrap the bars and place and warm them in the microwave for 5 seconds.
- Roll the bars together and then flatten between two pieces of parchment paper using a rolling pin.
- Use a 2” round cookie cutter to cut out cookies and ½” cutter to cut out the centers.
- Reroll any scraps and repeat until you have 4 cookies.
- Place the cookies on the baking sheet and bake for 5-6 minutes. Let cool.
- Meanwhile, place the butter, Swerve brown sugar and heavy cream into small pot over medium heat.
- Stir and cook for 10-15 minutes and the mixture thickens like caramel.
- Remove from heat and let cool for 5 minutes.
- Spoon the caramel over the cookies and top with toasted coconut.
- Press the coconut into the caramel.
- Melt the chocolate in a microwave safe dish for 25-30 seconds and stir smooth.
- Transfer to a plastic zip bag and drizzle the chocolate over the cookies.
- Place the cookies in the refrigerator for 4-5 minutes or until chocolate has hardened.
