QUESTIFIED LEMON CAKE
Ingredients:
- 1 1⁄2 cup almond flour
- 1⁄4 cup coconut flour
- 1⁄2 scoop Quest Multipurpose Protein Powder
- 2 tbsp baking powder
- 1⁄8 tsp salt
- 1⁄2 cup vegetable oil
- 1⁄4 cup cream cheese, room temperature
- 1⁄4 cup zero calorie sweetener
- 4 eggs
- 1⁄4 cup egg whites
- 1⁄4 cup unsweetened applesauce
- 3 tbsp almond milk
- 1 tsp vanilla
- Zest from 1 lemon
Method
- Preheat the oven to 350F and prepare two 6-inch round pans with non-stick spray and parchment paper at the bottom.
- In a mixing bowl, stir together the almond flour, coconut flour, baking powder and salt.
- In another bowl, beat together the oil, cream cheese and sweetener until well blended.
- Add in the eggs, egg whites, applesauce, milk and vanilla and beat until combined. Stir in the zest.
- Add the wet ingredients to the dry ingredients and mix until combined. Divide the batter between the pans and bake for 25-30 minutes and cooked through. Let the cakes cool completely.
- Once cooled, beat the heavy cream until fluffy and then mix in the protein powder and extract.
- Place one cake layer onto a serving tray and add a layer of frosting.
- Sprinkle with half of the Lemon Bar crumbles.
- Top with the second cake and cover in the frosting.
- Finish with remaining crumbles and lemon slices.
- Chill until ready to serve.
