Ingredients
CHOCOLATE SPRINKLED DOUGHNUT COFFEE CAKE
Cake:
Streusel:
- 1⁄2 cup almond flour
- 2 1⁄2 tbsp zero calorie sweetener
- 1 tsp cinnamon
- 2 tbsp butter, melted
Icing:
- 2oz cream cheese, room temperature
- 1 tbsp butter, room temperature
- 2 tbsp powdered zero calorie sweetener
- 1-2 tbsp almond milk
- 3 tsp multi-colored sprinkles
Method
- Preheat the oven to 350 F and prepare an 8×8” pan with parchment paper.
- In a microwave safe bowl, add the chopped Quest bars and 1⁄4 cup of the almond milk.
- Microwave on high for 30 seconds. Stir until the bar has melted.
- You may need to pop it back into the microwave for an additional 10-15 seconds.
- There will be small clumps, that’s ok.
- Transfer the mixture to a large mixing bowl and add in the remaining milk, eggs and coconut oil. Whisk to combine.
- In another bowl, combine the almond flour, oat flour, cocoa powder, sweetener, baking soda, baking powder and salt.
- Add the dry mixture to the wet and stir until no dry spots remain.
