Healthy Holidays Recipe: Quest Nutrition Cornbread

 2 tablespoons unsalted butter, melted

cup zero-calorie sweetener

 1 whole egg

 2 egg whites

 ½ teaspoon baking soda

cup nonfat Greek yogurt

 2 tablespoons unsweetened applesauce

 ¼ cup low fat buttermilk

 ½ cup cornmeal

 3 tablespoons coconut flour

 1 scoop Quest® Multi-Purpose Mix Protein Powder

 1 scoop Quest® Vanilla Milkshake Protein Powder

 ½ teaspoon salt


1. Preheat oven to 350°F. Spray an 8” baking dish with cooking spray and set aside.

2. In a medium mixing bowl, stir together the butter and zero-calorie sweetener, then whisk in the

egg and egg whites. Whisk in the baking soda, Greek yogurt, applesauce and buttermilk. In a

separate bowl, mix the cornmeal, coconut flour, Quest® Multi-Purpose Mix Protein Powder and

Quest® Vanilla Milkshake Protein Powder and salt. Add the dry mixture to the wet and stir to

combine. Try not to over-mix.

3. Add the batter to your baking dish and smooth it out. Bake for 24-26 minutes, or until the center

is set.
