Cut the eggs in half and place the yolks into a bowl along with the mayonnaise, sour cream, dijon, chives, parsley, lemon and salt and pepper and then mix until combined.
Stir in the crushed chips. Set aside.
In a large bowl, add hot water, food coloring and vinegar.
Drop the egg whites in and let sit for 15 minutes.
Remove and place them onto a paper towel.
Fill each egg white cavity with the yolk mixture and top with chopped chives. Serve.
