Ingredients
MOCHA ICED COFFEE CUPCAKES
- 1 ½ cups almond flour
- ⅓ cup unsweetened cocoa powder
- ¼ cup zero calorie sweetener
- ½ scoop Quest Chocolate Milkshake Protein Powder
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup Quest Mocha Latte Iced Coffee (about ⅓ of the bottle)
- 2 eggs
- 1 tbsp whole milk ricotta cheese
- 2 tbsp vegetable oil
Frosting:
- ½ cup whole milk ricotta cheese
- 1 tbsp Quest Mocha Latte Iced Coffee
- ½ scoop Quest Chocolate Milkshake Protein Powder
Topping:
- 10 coffee beans
- Cocoa powder for dusting
Method
- Preheat the oven to 350 F and prepare a muffin pan with 10 cupcake liners.
- In a mixing bowl, stir together the almond flour, cocoa powder, sweetener, protein powder, baking powder and salt.
- In another bowl, whisk together the Quest Mocha Latte Iced Coffee, eggs, ricotta cheese and oil until smooth.
- Add the dry ingredients to the wet and combine. Spoon the mixture evenly between the 10 liners.
- Bake the cupcakes for 16-18 minutes and cooked through. Let cool.
- Stir together the frosting ingredients and use a butter knife to spread frosting over the top of each cupcake.
- Dust with cocoa powder and top with a coffee bean.
