Serves Two:

Ingredients:

  • 1 yellow onion, sliced, larger rings reserved
  • 2 bags Quest Protein Chips (BBQ)
  • ¼ teaspoon paprika or chili powder
  • ¼ teaspoon garlic salt
  • 1/8 teaspoon cayenne
  • 1 egg, lightly beaten

Method:

Preheat oven to 450 degrees.  Lightly crush chips while in the bag and pour into a mini blender with the paprika, garlic salt and cayenne. Pulse to make fine crumbs. Place half on a shallow plate. Take about 28 medium-large onion rings and place on a plate. One by one, dip each in the egg. Tap off excess egg. Gently coat with the crumb mixture. (If the crumbs get too wet, they won’t stick, so dip carefully). Repeat with remaining rings and crumbs. Place on a nonstick cooking sheet sprayed with cooking spray. Spray the tops of each onion with cooking spray.  Bake for 13 minutes or until brown and crispy.
