Ingredients:
Vanilla Bean Frozen Yogurt
- 1 ½ scoops Quest® Vanilla Milkshake Protein Powder
- ½ cup unsweetened cashew milk
- 7 ounces 2% plain Greek yogurt
- ⅓ cup plus 1 tablespoon zero-calorie sweetener
- 1 teaspoon vanilla extract
- 1 small vanilla bean pod
Churro & Cinnamon Bun
- 2 Cinnamon Roll Quest Bar®
- 3 scoops Quest® Vanilla Milkshake Protein Powder
- 4 tablespoons almond milk
- 4 tablespoons zero-calorie sweetener
- 1 teaspoon cinnamon
- 4 tablespoons oat flour
- 4 tablespoons almond flour
- 1 teaspoon baking powder
Dusting
2 teaspoons zero-calorie sweetener
½ teaspoon cinnamon
Chocolate Glaze
3 tablespoons Quest® Chocolate Milkshake Protein Powder
2 tablespoons sugar-free chocolate
3 tablespoons unsweetened almond milk
1 teaspoon zero-calorie sweetener
Whipped Cream
1¼ scoops Quest® Vanilla Milkshake Protein Powder
½ teaspoon pure vanilla extract
1 teaspoon zero-calorie sweetener
1 cup ice
½ cup water
Caramel
1½ tablespoons calorie-free caramel sauce
2 teaspoons Quest® Vanilla Milkshake Protein Powder
Method:
Ice Cream
- Scrape down the sides of the vanilla bean to remove the pods.
- Add the pods and remaining frozen yogurt ingredients to a blender and blend on medium-high for 1 minute.
- Pour contents into an ice cream maker and follow the manufacturer’s instructions. Yogurt should be frozen within 15 minutes.
- Remove from ice cream maker and place in a freezer-safe bowl to harden for 2-4 hours.
Churro & Cinnamon Bun
- Preheat oven to 350°F.
- In a medium microwave-safe bowl, microwave unwrapped Quest Bars®, almond milk, sweetener, and cinnamon for 60 seconds. Remove and stir until smooth.
- Stir in Quest Protein Powder®, oat flour, almond flour, and baking powder.
- Form two large dough balls and two smaller dough balls on wax paper.
- Create two rectangles with the larger dough balls (about the size of a hot dog bun).
- Roll the two smaller balls into two long churro-sized rectangles.
- Place all four pieces on a silpat and bake for 8-10 minutes.
- Remove from oven and spray the churros with nonstick cooking spray. Immediately coat them in your dusting cinnamon and zero-calorie sweetener.
- Once the buns are cooled, slice them down the center.
Chocolate Glaze & Drizzle
- In a small microwave-safe bowl, melt the sugar-free chocolate, almond milk, and sweetener.
- Stir in the Quest® Protein Powder until smooth.
Whipped Cream
In a small blender, blend whipped cream ingredients until very thick and airy, about 2 minutes. (Measure carefully, as the mixture will not froth if the measurements aren’t exact).
Caramel
Stir together the caramel and Quest® Protein Powder until smooth.
Assembly:
- Carefully dip the outside of each bun into the chocolate glaze.
- Lay one churro inside each bun.
- Scoop two large scoops of frozen yogurt on top.
- Pipe whipped cream on top.
- Drizzle with remaining chocolate glaze and caramel.
