Quest Peanut Butter Cup Banana Bread
At the Quest Blog we consider banana bread to be among life’s more rewarding pleasures. So it goes without saying that when the Quest Test Kitchen dropped Peanut Butter Cup Banana Bread we were first in line. Really they just called us and asked if we’d like to try some. We did. It was fabulous.

Ingredients
PEANUT BUTTER CUP BANANA BREAD
- 2 overly ripe bananas, mashed (about 1 cup)
- 3 eggs
- 2 tsp vanilla extract
- ¼ cup unsweetened applesauce
- 2 cups almond flour
- 1 scoop Quest Multipurpose protein powder
- 2 tbsp zero calorie sweetener
- ½ tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 package Quest Peanut Butter Cups, chopped
Method
- In a mixing bowl, whisk together the mashed bananas, eggs, vanilla and applesauce.
- Add in the almond flour, sweetener, salt, protein powder powder, baking soda and cinnamon.
- Stir until a batter comes together.
- Fold in the chopped peanut butter cups and transfer the batter to the prepared pan.
- Bake for 40-45 minutes and a toothpick comes out clean.
- Cut into 10 slices and serve.
