Did someone say Questified avocado corn fritters? No? Well that’s where we come in. Around the Quest office that’s all you ever hear some days. Why? Because they’re easy to make and they’re extremely delicious. Try them out and you’ll be singing their praises too.
Chop the cauliflower into florists and then add them to a food processor until chopped finely like rice sized pieces and then transfer to a microwave safe and cover with plastic wrap.
Cook on high for 7-8 minutes and tender and let cool slightly.
Transfer to a tea towel and drain the excess liquid.
In a bowl, stir together the drained cauliflower, corn, cheese, almond flour, eggs, crushed chips, salt and pepper.
Separate the mixture into 10 patties. Heat a large skillet with medium-high heat.
Once hot, add 2 tablespoons of oil and 2-3 cauliflower patties.
Cook for 2 minutes and golden brown, flip and cook the other side. *Note-if a piece of corn falls off of the patty, remove it from the pan before it gets too hot and pops.
Repeat until you have cooked all the patties.
Place the avocado, cilantro, sour cream, water, lime juice and salt and pepper into a blended and blend until smooth.
Top each patty with a dollop of avocado cream and serve.
