Around here at Quest HQ we have a running debate: has a Quest Protein Bar really “made it” if it hasn’t been Questified into something entirely unrecognizable. At the Quest Blog we lean heavily toward the “no” camp. That’s why we were so excited when we learned about this recipe for pumpkin chocolate chip muffins. Now that’s a protein bar that’s reached its full potential.

Ingredients

QUESTIFIED PUMPKIN CHOCOLATE CHIP MUFFINS

Ingredients:

  • ⅔ cup almond flour
  • ¼ cup coconut flour
  • 1 scoop Quest Salted Caramel Protein Powder
  • ¼ cup zero calorie sweetener
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 Quest Pumpkin Pie Bar, cut into small pieces
  • ½ cup + 2 tbsp almond milk, separated
  • ½ cup vegetable oil
  • ½ cup pumpkin puree
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup sugar free chocolate chips

Method

  1. Preheat the oven to 350 F and prepare a muffin tin with 12 liners.
  2. In a mixing bowl, stir together the almond flour, coconut flour, protein, sweetener, baking powder and salt.
  3. In a microwave safe mixing bowl and melt the pumpkin bar and 2 tablespoons of almond milk together in 20 second increments, stirring between each until smooth.
  4. Add in the remaining milk, oil, pumpkin puree, eggs and vanilla and whisk until smooth and well
    combined.
  5. Add the dry ingredients to the wet and use a rubber spatula to mix until combined.
  6. Use a cookie scooper to distribute the batter between the liners. Top each muffin with a few chocolate chips and bake for 18-22 minutes and golden brown.
