QUESTIFIED PUMPKIN STREUSEL BARS
Ingredients:
Base:
- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup butter, cold
Filling:
Topping:
- ¼ cup crushed walnuts
- ¼ cup crushed pecans
- 1 tbsp pumpkin seeds
Method
- Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
- Place the base ingredients into a food processor and blend until the mixture resembles wet
sand and then press it evenly into the bottom of the prepared pan.
- Bake for 6-9 minutes until golden brown.
- Meanwhile, in a large mixing bowl, stir together the hot water and gelatin.
- In a microwave safe bowl, add 2 tablespoons of the milk and bar pieces and cook on high for 30 seconds.
- Stir until smooth and then add then add to the bowl with the water and gelatin.
- Add in the remaining milk, pumpkin puree, sweetener, protein and cinnamon and whisk until well combined.
- Pour the mixture over the base and top with crushed walnuts, pecans and pumpkin seeds.
- Cover and chill for at least 4 hours before cutting into 16 bars and serving.
