Ingredients

QUESTIFIED PUMPKIN STREUSEL BARS

Ingredients:

Base:

  • 1 cup almond flour
  • ¼ cup coconut flour
  • ¼ cup butter, cold

Filling:

Topping:

  • ¼ cup crushed walnuts
  • ¼ cup crushed pecans
  • 1 tbsp pumpkin seeds

Method

  1. Preheat the oven to 350 F and prepare an 8×8 inch pan with parchment paper.
  2. Place the base ingredients into a food processor and blend until the mixture resembles wet
    sand and then press it evenly into the bottom of the prepared pan.
  3. Bake for 6-9 minutes until golden brown.
  4. Meanwhile, in a large mixing bowl, stir together the hot water and gelatin.
  5. In a microwave safe bowl, add 2 tablespoons of the milk and bar pieces and cook on high for 30 seconds.
  6. Stir until smooth and then add then add to the bowl with the water and gelatin.
  7. Add in the remaining milk, pumpkin puree, sweetener, protein and cinnamon and whisk until well combined.
  8. Pour the mixture over the base and top with crushed walnuts, pecans and pumpkin seeds.
  9. Cover and chill for at least 4 hours before cutting into 16 bars and serving.
