Ingredients
QUESTIFIED S’MORES CREPES
Ingredients:
- 1 1⁄4 cup egg whites
- 1⁄2 scoop Quest Vanilla Milkshake Protein Powder
- 2 tbsp coconut flour
- 2 tbsp almond milk
- Pinch salt
Filling:
- 1⁄2 cup heavy cream
- 1⁄2 scoop Quest Vanilla Milkshake Protein Powder
- 1 Quest S’mores Protein Bar, finely chopped
- 1⁄3 cup chocolate chips, mini and sugar free
Method
- In a mixing bowl, whisk together the egg whites, protein, coconut flour, almond milk, zero calorie sweetener and salt.
- Use an immersion blender to blend up any chunks of protein powder.
Heat a large frying pan with non-stick spray over medium-low heat. - Once hot, lift the frying pan away from the heat and gently pour in 1⁄4 cup of batter while swirling the pan to thin out the mixture in an even layer.
Cook for 1-2 minutes and until the edges start pulling away. - Use a rubber spatula to gently flip the crepe and cook the other side for 20 seconds.
- Repeat until you have used all the batter (about 5 crepes).
Use a handheld mixer to beat the heavy cream until fluffy. - Add in the protein powder and mix to combine.
- Transfer to a piping bag.
- Pipe the filling into the center of each crepe, top with s’mores bar crumbles, half of the chocolate chips and then roll up the crepe.
- Melt the remaining chocolate chips in a microwave safe dish and drizzle over crepes before serving.
