Ingredients

QUESTIFIED SUMMER SALAD

Ingredients:

  • 2 cups arugula
  • 1⁄2 cup basil, thinly sliced
  • 1 avocado, chopped
  • 1 cup cherry tomatoes, halved
  • 1⁄2 cup fresh corn, about 1 ear of corn
  • 1 english cucumber, chopped
  • 1⁄4 cup goat cheese, crumbled
  • 4 pieces of prosciutto, chopped
  • 2 bags Quest Ranch Tortilla Chips

Dressing

  • 3 tbsp red wine vinegar
  • 1⁄4 cup olive oil
  • Juice from 1⁄2 a lemon
  • 1⁄2 tsp dijon mustard
  • 1⁄2 tsp garlic powder
  • 1⁄2 tsp dried oregano
  • Salt and pepper to taste

Method

  1. In a mixing bowl, add the arugula, basil, avocado, tomatoes, corn, cucumber, goat cheese and prosciutto.
  2. Whisk together the dressing ingredients and toss in the salad.
  3. Serve the salad with tortilla chips.
