Ah, chicken soup. The ultimate comfort food, right? Not so fast. Even greatness can be improved upon when you add that tangy taste and satisfying crunch of Quest Chili Lime flavored Tortilla Style Protein Chips! Take the chicken soup you know and love, add the big taste of Quest protein chips, and you’re taking comfort food to a whole new level.
In a large heavy bottom pot, turn on medium heat. Once hot, add the olive oil and onion and zucchiniand cook until translucent.
Add in the garlic and spices and cook for 2 minutes and browned.
Add in the tomatoes, chicken broth, water, lime juice followed by the chicken. Bring to a boil and then reduce to a simmer and then let cook for 20 minutes.
Ladlethe soup into a serving bowl and top with Quest Chips, fresh cilantro and avocado slices.
