We’re going a little non-traditional here for our St. Patty’s Day recipe, but once you take a bite of these chili lime avocado egg boats, you’ll want them every day. The secret ingredient is our Chili Lime Tortilla Protein Chips — they add a satisfying crunchy texture and a hint of heat to spice up your St. Patty’s Day adventures.

Ingredients
AVOCADO EGG BOATS
- 2 avocados, pitted and peeled
- 1 egg
- 1/2 cup egg whites
- 1/4 cup almond milk
- 1 bag Quest Chili Lime Tortilla Chips
- 2 tbsp cheddar cheese
Method
- Peel the skin from the avocados and carefully remove the pit
- Scoop some flesh from the inside of the avocados to make room to fill them. Not too much.
- Crush the chips into a fine crumble and place 3/4 of the crushed chips into a mixing bowl.
- Add in the egg, egg whites and almond milk and whisk until smooth and fluffy.
- Prepare a skillet with non-stick spray and turn on medium heat.
- Pour the egg mixture into the hot skillet and stir continuously until the eggs begin to cook (about 1-2 minutes)
- Sprinkle the cheese over the top and remove from heat.
- Fill the avocados with the eggs and to with the remaining crushed chips. Serve immediately.
