Ingredients

AVOCADO EGG BOATS

Method

  1. Peel the skin from the avocados and carefully remove the pit
  2. Scoop some flesh from the inside of the avocados to make room to fill them. Not too much.
  3. Crush the chips into a fine crumble and place 3/4 of the crushed chips into a mixing bowl.
  4. Add in the egg, egg whites and almond milk and whisk until smooth and fluffy.
  5. Prepare a skillet with non-stick spray and turn on medium heat.
  6. Pour the egg mixture into the hot skillet and stir continuously until the eggs begin to cook (about 1-2 minutes)
  7. Sprinkle the cheese over the top and remove from heat.
  8. Fill the avocados with the eggs and to with the remaining crushed chips. Serve immediately.
