PB BANANA CREAM PIE

Ingredients:
Crust
2 Banana Nut Muffin Quest Bars®
1 teaspoon zero-calorie sweetener
Nonstick cooking spray
Filling
1 scoop Quest® Peanut Butter Protein Powder
6 ounces low-carb banana-cream-pie-flavored yogurt
1 tablespoon sugar-free vanilla pudding mix (dry)
¼ teaspoon banana extract
1 tablespoon zero-calorie sweetener
Topping
2 teaspoons crushed peanuts
Method:
Crust
- Preheat oven to 350°F.
- Microwave unwrapped Quest Bars® for 12 seconds.
- Mash together bars and sweetener, then divide into four even pieces.
- Spray four small ramekins with cooking spray. Press bar pieces into the bottom and up the sides of each ramekin.
- Bake for 7 to 8 minutes, or until golden brown. Remove to cool.
Filling
- In a stand mixer, add Quest Protein Powder®, yogurt, pudding mix, banana extract, and sweetener. Beat for 2 minutes.
- Once smooth, chill filling for 1 hour.
- Spoon filling evenly into crusts.
- Sprinkle each pie with crushed peanuts.
