Method
- Preheat oven to 450 degrees F and prepare a baking sheet with parchment paper.
- Place the flour in a bowl.
- In another bowl, stir together the crushed chips, parsley, cayenne pepper, salt and pepper.
- Add the beaten eggs to a third bowl.
- Dry the pickles with a paper towel and then toss them all in the flour until well coated.
- Once the pickles are coated in oat flour, dip each one of the egg wash and then finally in the Quest Tortilla Style Protein Chip crumbles.
- Place the covered pickles on the baking sheet in one even layer (no overlapping)
- Bake the pickle chips for 12-15 minutes until golden brown.
- Let cool for five minutes and then dig in!
