Ingredients
KETO CHOCOLATE CHIP COOKIE TRUFFLES
- 2 Quest Chocolate Chip Cookies
- 1 Scoop Quest Vanilla Milkshake Protein Powder
- 2 oz cream cheese
- 1 tbsp heavy cream
- 1/2 cup sugar-free chocolate chips
- 1/2 tsp coconut oil
Method
DIRECTIONS
- Place the cookies into a food processor or nutribullet and blend until fine crumbles form.
- Remove 1 tablespoon of the crumbles and set it aside for topping later.
- Add in the protein powder, cream cheese and almond milk and continue blending until combined.
- Separate the mixture into 11 evenly-sized balls and place them on a baking sheet lined with parchment paper.
- Chill in the freezer for 10 minutes.
- Melt the chocolate chip and coconut oil together in a microwave-safe bowl in 15 second increments — stirring between each until the chocolate is smooth.
- Dip each ball in the chocolate and then place it on the baking sheet.
- Top the truffles with cookie crumbles and chill until chocolate is solid.
