The gang at the Quest Test Kitchen is finishing strong this month with a Questified Chocolate Strawberry Shortcake recipe that features Quest Vanilla Milkshake Protein Powder and a Quest Chocolate Frosted Cookie.

Ingredients:
Cake:
- 2 ½ cups almond flour
- ⅓ cup zero calorie sweetener
- 2 tbsp gluten free baking flour
- 1 scoop Vanilla Milkshake Protein Powder
- ¼ tsp salt
- ½ tsp baking powder
- ¼ tsp baking soda
- 2 eggs
- ¾ cup coconut milk
- 3 tbsp lemon juice
- 1 tsp vanilla extract
Topping:
Method
- Preheat the oven to 350 F and prepare a 12×9 sheet pan (with ridge) with parchment paper.
- In a bowl, stir together all the dry cake ingredients.
- In another bowl, whisk together the wet cake ingredients.
- Add the wet to the dry and stir with a rubber spatula until combined.
- Spread the batter in an even layer into the bottom of the pan.
- Bake the cake for 14 minutes. Let cool.
- Cut the cake into 16 evenly sized squares.
- Place the heavy cream into a mixer and beat until stiff peaks form.
- Fold in the protein powder.
- Transfer the mixture to a piping bag and top each square with filling.
- Finish with chopped strawberries and frosted cookie crumbles.
