Ingredients
QUESTIFIED SUMMER SALAD
Ingredients:
- 2 cups arugula
- 1⁄2 cup basil, thinly sliced
- 1 avocado, chopped
- 1 cup cherry tomatoes, halved
- 1⁄2 cup fresh corn, about 1 ear of corn
- 1 english cucumber, chopped
- 1⁄4 cup goat cheese, crumbled
- 4 pieces of prosciutto, chopped
- 2 bags Quest Ranch Tortilla Chips
Dressing
- 3 tbsp red wine vinegar
- 1⁄4 cup olive oil
- Juice from 1⁄2 a lemon
- 1⁄2 tsp dijon mustard
- 1⁄2 tsp garlic powder
- 1⁄2 tsp dried oregano
- Salt and pepper to taste
Method
- In a mixing bowl, add the arugula, basil, avocado, tomatoes, corn, cucumber, goat cheese and prosciutto.
- Whisk together the dressing ingredients and toss in the salad.
- Serve the salad with tortilla chips.
