Healthy Holidays Recipe: Quest Nutrition Apple Pie

Nothing conjures togetherness and taste like Apple Pie. In this Quest Nutrition Healthy Holidays recipe, we show you how to make the all-time classic irresistibly delicious the #CheatClean way. Oh, and did we mention this recipe includes guilt-free ice cream on top? Yeah, there’s that. 🙂

Ingredients:
Crust
- 2 Apple Pie Quest® Bars
- 2 tablespoons creamy almond butter
- 2 tablespoons almond flour
- 1 tablespoon zero-calorie sweetener
Filling
- 2 medium green apples, peeled and chopped
- 1 teaspoon ground cinnamon
- 2 tablespoons zero-calorie sweetener
- 1 tablespoon unsalted butter
- 2 tablespoons Quest® Vanilla Milkshake Protein Powder
- 1 tablespoon sugar-free syrup
- 1 tablespoon water
Topping
- ¼ cup rolled old fashioned oats
- 2 tablespoons chopped walnuts
- ¼ teaspoon cinnamon
- 1 tablespoon zero-calorie sweetener
- 1 tablespoon unsalted butter
- Ice Cream
- 2 cups 1% milk
- ¼ cup half and half
- 3 scoops Quest® Vanilla Milkshake Protein Powder
- ⅓ cup zero-calorie sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons sugar-free maple syrup
Method:
Pie
1. Preheat oven to 350°F.
2. Spray 8 glass or tin muffin cups with cooking spray.
3. Microwave 2 unwrapped Quest® Apple Pie Bars with the almond butter for 40 seconds. Stir in
the almond flour and 1 tablespoon zero-calorie sweetener. Knead until combined and press into
the bottoms and slightly up the sides of the 8 muffin cups.
4. In a medium bowl, toss the apples, cinnamon and zero-calorie sweetener. Mix well. Set aside.
5. In a medium saucepan, melt the 1 tablespoon butter substitute. Add the apple mixture and
sauté for 5 minutes. Remove from heat to cool slightly.
6. Mix the Quest® Vanilla Milkshake Protein Powder, syrup and water together in a small bowl.
Pour into the apple mixture and incorporate well.
7. Spoon the apples evenly into each muffin cup.
8. Stir together the oats, walnuts, cinnamon, zero-calorie sweetener and butter substitute until
incorporated and crumbly. Sprinkle one heaping teaspoon on top of each mini pie.
9. Bake for 15 minutes. Remove to cool.
Ice Cream
1. Blend the ice cream ingredients together for 1 minute. Pour into an ice cream maker. Follow
the manufacturer’s instructions. Ice cream should be ready within 20 minutes.
2. Divide the ice cream on top of each apple pie.
