Ingredients

GRILLED WATERMELON SALAD

DRESSING

  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/2 tsp dijon mustard
  • 1tsp zero calorie sweetener

SALAD

Method

  1. In a bowl, whist together the dressing ingredients and set aside
  2. Prepare a grilling skillet with non-stick spray and turn on medium head.
  3. Add the watermelon chunks to the hot pan and cook for 2-3 minutes on each side.
  4. Remove and let cool slightly.
  5. In a large mixing bowl, toss together the salad, shallot slices, feta cheese and crushed chips.
  6. Toss in the dressing as you see fit.
  7. Transfer the salad to a serving platter and arrange with grilled watermelon slices.
  8. Enjoy!
