Cooking Clean With Quest
Nutritious, delicious, and layered with personality. Host Cassey Ho (aka Blogilates) and special guest Alisha Marie (aka MacBby11) show you how to make a #CheatClean Raspberry Indulgence dessert that will have you at a loss for words.

Ingredients:

  • 2 White Chocolate raspberry Quest Bars
  • 1 1⁄4 cup plain Greek 0% yogurt
  • 1.5 tablespoons sugar-free pudding powder, vanilla flavor
  • 1⁄2 serving vanilla protein powder
  • 1⁄2 teaspoon vanilla extract
  • 3 tablespoons granulated sugar substitute (erythritol)
  • 4 tablespoons almond milk
  • 1⁄2 cup raspberries

TOPPING:

  • 3 tablespoons sugar-free chocolate chips (Lily’s sugar-free)
  • 4 tablespoons almond milk
  • 1⁄4 serving chocolate protein powder

Method:

1. Preheat oven to 400 degrees. Set out four 3×3” glass dishes.

2. Microwave both bars on sprayed waxed paper for 10 seconds. Cut each bar into 6 squares

3. Flatten each piece down to form a perfect square, slightly smaller than the base of your vessel.

(If your dish is smaller on the bottom than on the top, adjust the size of your slices. Quest Bar will expand when baked).

4. Place all the squares on a silpat and bake for 6 minutes. Remove and allow to cool for at least 10 minutes on the tray.

5. In a medium bowl, whisk the yogurt through almond milk until smooth. Remove 1/2 of the mixture into a small bowl and toss in the berries. Stir and smash them together.

6. Spoon one rounded tablespoon of the raspberry filling into each dish. Top with a cookie and press down. Spoon a rounded tablespoon of white filling layer on top of the cookie and lay down another cookie. Press lightly. Spoon raspberry filling on top and lay down a cookie and press. Top with remaining white filling.

7. In a small bowl, combine the chocolate chips and milk and microwave for 45 seconds. Remove and stir until all the chips melt. Stir in the protein powder and stir well. Carefully drizzle on top and swirl to coat top entirely.

8. Cover with foil and leave in fridge for a minimum of 4 hours, to overnight. You want the cookies to soften.

9. Garnish each one with one raspberry.

Macros (makes four Raspberry Indulgences): 200 calories. 23g protein. 6g fat. 13g net
