  • ⅓ cup coconut milk, full fat
  • ⅓ cup zero calorie sweetener
  • ¼ cup lemon juice
  • Zest 1 lemon
  • 1 tbsp cornstarch
  • 1 tbsp butter
  • Pinch turmeric for color (optional)


  1. Preheat the oven to 350ºF and prepare a baking sheet with parchment paper.
  2. Cut the Lemon Cake Quest Bars into small pieces and place them on the baking sheet.
  3. Bake for 6-7 minute and golden brown, let cool and then transfer to a blender and blend until small fine crumbles form.
  4. Add the crumbles, almond flour, protein powder, melted butter and water to a mixer with a paddle attachment (or you can use a handheld mixer if necessary) and mix until a dough begins to form.
  5. Separate the dough into 9 evenly sized balls and press them down using the back of a teaspoon to create an indent in the center.
  6. Place the cookies on the baking sheet and bake for 6-8 minutes until golden brown.
  7. Meanwhile, place the filling ingredients into a small pot over low-medium heat.
  8. Stir for 5 minutes until thickened. Let cool.
  9. It will thicken even more as it cools. Once the cookies and filling have cooled, fill each cookie cavity with lemon filling and serve.
