Ingredients

PANCAKE CEREAL

  • 1 cup Quest Vanilla Protein Shake
  • 2 eggs, large
  • 1 tsp vanilla extract
  • 1/2 cup oat flour
  • 1/4 cup almond flour
  • 3 tbsp coconut flour
  • 2 tsp zero calorie sweetener
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch sea salt

Method

  1. In a mixing bowl, whisk together the Protein Shake, eggs and vanilla until well combined.
  2. Add in the remaining ingredients and whisk until smooth.
  3. Let the batter sit for 5-10 minutes.
  4. Prepare a large skillet with nonstick spray and turn on medium heat.
  5. Transfer the batter to a large zip-bag and cut a small piece from the corner to create a piping bag.
  6. Pipe small 1-inch pancakes into the skillet.
  7. Cook each for 1-2 minutes — flip and cook until golden brown.
  8. Repeat until you have finished the batter.
  9. Place roughly 1/6 of the mini pancakes into a bowl — top with fresh fruit and maple syrup if desired.
