Quest Chocolate Chip Cookie Dough Protein Pancakes with Chocolate Protein Fluff
A healthy, decadent recipe from fan Marie C. for Quest Chocolate Chip Cookie Dough Protein Pancakes. Enjoy!
For the pancakes:
• 1 Cup almond flour
• 1/2 scoop protein powder (I used vanilla)
• 1 tbsp chia seeds,
• 1/2 cup fat free greek yogurt,
• 2 egg whites
• 2/3 Quest Chocolate Chip Cookie Dough
• 1 cube 70% dark choc
• 1 tsp choc almond butter
• 1 tsp vanilla extract,
• 1 tsp chocolate extract,
• Dash of almond milk to get the right consistency.
Blend everything in the pancake mixture together.
Protein Fluff:
• Fat free Greek yogurt,
• 1/2 scoop protein powder (I used vanilla)
• 1 tsp chocolate extract
• Toffee flavor Sweet Leaf Stevia Drops,
• 1 tbsp cacao powder
• 1 tsp choc almond butter.
Spoon pancake mix into a pan using non-stick one calorie spray and cook on medium/low heat until set enough to flip and cook the other side. Layer the pancakes with sliced banana and fluff. Top the pancake stack with sliced banana, fluff, and the rest of the Quest Bar chopped and microwaved (makes it go hard and chewy when cooled) and 1 cube 70% dark choc chopped up.
I got five thin pancakes out of the recipe but it is quite a bit and I can’t finish them. Next time I will either make less or make extra and freeze some for next time. Enjoy!
