Quest Cinnamon Roll Muffins
If you love cinnamon rolls and you love muffins (who doesn’t?), here’s a #CheatClean recipe that needs to happen. Quest Cinnamon Roll Muffins by Paige Alexander.
Ingredients:
- 2 Cinnamon Roll Quest Bars
- 3oz or 1/2 heaping cup chopped Apple
- 1/2 cup Egg Whites
- 1/3 cup 0% or 2% Greek Fage Yogurt
- 1/2 cup Oats
- 1 scoop Vanilla Protein Powder
- 1/2 teaspoon Baking Powder
- Dash Cinnamon
- Dash Vanilla
Line 6 Muffin Tins with Silpat liners and spray with Butter Pam. Divide one Quest Bar into 6 pieces and microwave each piece for about 15 seconds and pat into bottom and up sides as far as possible of liner, repeat with other 5 pieces. Blend rest of ingredients ( minus the other Bar) in Magic Bullet til smooth, and pour equally into the 6 muffin tins. Chop remaining Quest Bar into as small as possible pieces and divide equally among tins and sprinkle on top. Bake at 350 for 20 minutes. Cool and spread with 1/2 Tablespoon Frosting. Store in refrigerator.
Frosting:
Combine 2-3 Tablespoons Vanilla Protein Powder with 2-3 Tablespoons Almond Milk, and dash of Stevia/Truvia is optional, blend to desired consistency and chill until ready to use. Enjoy. 🙂
