These Quest Mini Cheesecake Cups by The Super Sisters are the perfect #CheatClean snack to satisfy your sweet tooth with plenty of protein and fiber. They’re easy to make and are adorable! You could even turn these into mini pumpkin cheesecakes by adding in 1-2 tablespoons of pureed pumpkin and 1/4 tsp pumpkin spice. Talk about getting creative to stay on track this year.
- 1 Quest Bar of choice (we used Banana Nut)
- 1/4 cup Greek yogurt
- 2 tbs protein powder (we used Trutein Cinnabun)
- optional: chocolate chips or cacao nibs
Preheat oven to 350 degrees and spray 4 mini cupcake holes with nonstick spray. Break the Quest bar into four equal pieces and press into the mini cupcake holes. Bake for 5-6 minutes or until golden brown. Remove from oven and let cool. In a small bowl mix greek yogurt and protein powder until combined. Spoon greek yogurt mixture equally into each cup. Top with cacao nibs or dark chocolate chips. Enjoy!
