Quest Thin Mints
This drool-worthy Quest Thin Mint recipe from Erin Woodbury offers you a healthy, #CheatClean option of the classic Girl Scout cookie. They are absolutely delicious and completely addictive.
Ingredients
- Chocolate Brownie Quest Bar
- 1/4 cup Lilly’s no sugar chocolate chips
- 1/2 tsp coconut oil
- 1/2 tsp cocoa powder (optional)
- peppermint extract drops
Directions:
Heat and roll out a Quest Chocolate Brownie Quest Bar. Form it into 4 disks. Baked at 400 for 6 minutes then have it cool.
Then heat:
- 1/4 cup sugar free chocolate chips
- 1/2 tsp coconut oil
- 1/2 tsp cocoa powder (optional)
Once smooth, drop in a few drops of peppermint extract
Spread mix on one side of each cookie. Place in freezer for 5-10 minutes (or until set). Repeat on the other side. Serve at room temp or cold.
