Questify: Chocolate Chip Cookies!

As a chef at Quest Nutrition (real job, I swear), I get to create healthy recipes all day long. And since I love food of all kinds, I basically have to eat unhealthy stuff all the time. Now I know what you’re thinking, “how does someone who constantly eats unhealthy food also create healthy recipes?!” Well, for the longest time I justified this juxtaposition by calling my food adventures “research.” After all, how else would I get inspiration for all the macro-friendly foods I concoct in the Quest kitchen? While on my latest drive around town to find the hottest new foodie hotspots I thought “I need to turn this into my job!” So, naturally I decided to give some the most liked foods on Instagram a complete macro makeover. I’m setting out to Questify all my favorite cheat meals.
This month I have been obsessed with the Ice Cream Cookie Sandwich. But I won’t be making an ice cream cookie sandwich, which is basically an excuse to have cookies with your ice cream. No, this is a master’s course in food insanity. I’m going to create an Ice Cream Cookie Sandwich with churros…and donuts (don’t look at me that way) because why settle for just one? So instead of spending an hour scrolling through the #foodporn tag on IG (no shame) to find such a creation, I remembered, I’m a chef, I’ll just make my own. And now, so can you! Save the drive. Save the time. Heck, save your cheat meal. The homemade option is way better! You pumped yet? Good! Grab your weights and grab your pan. Okay, now put down the weights (for safety reasons) but keep the pan because it’s time to get cooking!
Rather than throw you in the deep end of creating an ice cream cookie sandwich churro donut extravaganza, I’ll start off small. Today I’m going to introduce you to my version of the cookie we’ll be using to create our final masterpiece. In this recipe, I upped the protein, surgically removed over half the calories, carbs and fat without altering the flavor. Say hello to the Chocolate Chip Qookie. I even Questified the name. Ingredients
- 1 scoop Quest® Vanilla Milkshake Protein Powder
- ½ scoop Quest® Multi-Purpose Mix Protein Powder
- 1 Chocolate Chip Cookie Dough Quest Bar
- 4 tablespoons butter, softened
- ½ cup zero-calorie sweetener
- 1 egg
- 1 tsp vanilla extract
- ¼ teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon hot water
- ¾ cup oat flour
- 7 tablespoons sugar free chocolate chips
Method
- Preheat oven to 350°F.
- Blend Quest Bar® into a powder.
- Cream together the butter, sweetener, and powdered Quest Bar® until smooth.
- Beat in the egg, then stir in the vanilla.
- Dissolve baking soda in hot water.
- Add to batter along with salt.
- Stir in oat flour, Quest® Protein Powder and sugar free chocolate chips
- Form into small discs roughly 2½-3 inches in diameter and bake for 7-8 minutes.
