Method
- Preheat the oven to 350 degrees F and prepare two baking sheets with parchment paper and then set them aside.
- Chop the Quest Hero Bar into small pieces and then place them into a food processor or nutribullet and blend until fine crumbles form (about 1-2 minutes).
- Add in the protein powder, sweetener, almond flour, baking powder, baking soda and salt and continue blending until well combined.
- add in the butter, egg, milk and vanilla and blend until a dough forms.
- Fold in the blueberries and then use a cookie scooper to make 14 evenly-sized cookie dough balls.
- Place the balls on the baking sheet about 2-inches apart.
- Press the balls down just slightly.
- Bake them for 11-13 minutes or until the edges are golden brown. Let cool.
- Stir together the protein powder and almond milk and then drizzle over the cooled cookies and enjoy!
