Method

  1. Preheat the oven to 350 degrees F and prepare two baking sheets with parchment paper and then set them aside.
  2. Chop the Quest Hero Bar into small pieces and then place them into a food processor or nutribullet and blend until fine crumbles form (about 1-2 minutes).
  3. Add in the protein powder, sweetener, almond flour, baking powder, baking soda and salt and continue blending until well combined.
  4. add in the butter, egg, milk and vanilla and blend until a dough forms.
  5. Fold in the blueberries and then use a cookie scooper to make 14 evenly-sized cookie dough balls.
  6. Place the balls on the baking sheet about 2-inches apart.
  7. Press the balls down just slightly.
  8. Bake them for 11-13 minutes or until the edges are golden brown. Let cool.
  9. Stir together the protein powder and almond milk and then drizzle over the cooled cookies and enjoy!
