  1. Preheat oven to 450 degrees F and prepare a baking sheet with parchment paper.
  2. Place the flour in a bowl.
  3. In another bowl, stir together the crushed chips, parsley, cayenne pepper, salt and pepper.
  4. Add the beaten eggs to a third bowl.
  5. Dry the pickles with a paper towel and then toss them all in the flour until well coated.
  6. Once the pickles are coated in oat flour, dip each one of the egg wash and then finally in the Quest Tortilla Style Protein Chip crumbles.
  7. Place the covered pickles on the baking sheet in one even layer (no overlapping)
  8. Bake the pickle chips for 12-15 minutes until golden brown.
  9. Let cool for five minutes and then dig in!
