Ingredients

CORNED BEEF HASH

  • 1 large sweet potato
  • 1 tbsp olive oil, separated1/2 yellow onion
  • 1/2 yellow onion
  • 1/2 red bell pepper, diced
  • 4 oz corned beef, cooked and shredded
  • 1 glove garlic, finely minced
  • 1/2 tsp dried parsley
  • salt and pepper to taste
  • fresh parsley for garnish
  • 3 eggs
  • 1 bag of Quest Ranch Tortilla Style Protein Chips

Method

  1. Cut your sweet potato into 1/2 inch chunks and boil or steam for 5 minutes or until tender.
  2. Preheat a skillet over medium heat and add the olive oil to the pan.
  3. Add the sweet potatoes, onion and peppers and cook for 5-8 minutes or until onions and peppers are tender.
  4. Add the salt and pepper, garlic and corned beef and continue cooking for an additional 3-5 minutes.
  5. Crush tortilla chips and stir into the hash.
  6. Crack three eggs into the mix, cover and cook for 4-5 minutes or until eggs are cooked to your liking.
  7. Serve and enjoy!
