Simple Purely Pumpkin Muffins
I’m going to be honest I love pumpkin everything. Especially during the cold winters I enjoy it even more. Enjoy this simple Gluten free, grain free pumpkin muffin recipe. It’s perfect with coffee or tea!
Simply Purely Pumpkin Muffins
Ingredients: makes 12 muffins
- ½ cup coconut flour
- 2 tsp cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp ground cloves
- ½ tsp baking powder
- ½ tsp kosher salt
- 1 cup pumpkin puree (canned)
- 1 tsp vanilla extract
- 4 whole eggs
- ¼ cup stevia or splenda sweetner
- ¼ cup unsweetened applesauce
Directions: Preheat oven to 400d F. Place muffin cups in a 12 muffin tin. Combine all dry ingredients in a medium bowl, combine all wet ingredients in another bowl. Add dry mixture to wet mixture and mix thoroughly until well combined. Spoon mixture evenly into 12 muffin tins. Bake for 18 minutes. Let cool and Enjoy!
